Virginia has been a dedicated meal-planner since her two boys first began full-day school in September 2013. Rather than throwing last-minute lunches together every morning, she relied on the plans she had laid out far in advance. Meal-planning lets Virginia enjoy stress-free mornings, and ensures her boys are getting tasty lunches they love every day.
We’ve already posted the plans Virginia put together for her boys’ first and second weeks at school. For even more ideas to add to your stockpile of nutritious, easy-to-prepare lunches, here is her calendar for Week 3:
Monday:
- Grilled cheese sandwiches on whole wheat bread
- Snap peas
- Apples
Tuesday:
- Lentils with rice
- Celery and no nut butter
- Mangoes
Wednesday:
- Ham & cheese pizza bites
- Grape tomatoes with bocconcini cheese)
- Pears
Thursday:
- Chicken fajitas
- Cucumbers
- Peaches
Friday:
- "No nut butter" & banana sandwiches
- Carrots and broccoli
- Fresh berry salad
