Great for fish, chicken, pork and hamburgers!
Ingredients:
- 1 Pineapple
- 3 Jalapeno peppers (green bell peppers can be substituted)
- 3 Green onions
- 1 Lime
- 1 tbsp Chopped cilantro
- As needed Oil
- Salt & Pepper
Method:
1. Cut the pineapple into ½-inch thick rings.
2. Brush each side of the pineapple rings with a small amount of oil.
3. Grill the pineapple rings over medium-high heat for 2-3 minutes per side.
4. Set the pineapple aside and allow it to cool.
5. Cut the Jalapenos into a small dice (about 1/8 inch). Note: The level of heat can be controlled by the amount of jalapeno seeds in the salsa. The more seeds, the spicier it will be.
6. Cut the green onions into thin slices on a bias (a slight angle).
7. Cut the cooled pineapple into a small dice (1/4 inch).
8. In a bowl, combine the pineapple, jalapenos, green onion, juice from the lime and chopped cilantro.
9. Season to taste with salt and pepper.
